It’s totally ok to dye you’re hair, generally this is fine from approx a few weeks after a hair transplant. No worries for you being over 7 months out ! With only 3000 scalp and 500 beard grafts taken, I think a second pass to fill out the mid section would give you an A+ look. Have you considered a second HT? Even with your salt and pepper’d color hair your transplant took legitimate years off of your pre-op appearance. That’s amazing! Congratulations!!
